CouponClipinista's Meatless lasagna 30 min Recipe!

What you need:

Lasagna noodles
olive oil
1 red pepper
1 onion
1 can of your favorite sauce (I like Hunts or San Marzano crushed tomatoes & add garlic, basil, onion, a touch of sugar and salt)
1 can of diced tomatoes
4 cups of ricotta cheese
1 package of mozzarella (I used fresh)
6 mushrooms sliced

Here is how you make it:
Cook the noodles as directed on the package
Dice the onions and peppers and fry them in olive oil
Mix the fried onions and peppers with the sauce (I like Thick sauce so I added 1/2 cup of water– you may want to add more)
Once the noodles are done fill a pan with 1 cup of sauce
Place the noodles down (1 layer
Cover noodles in motzerlla cheese (I sliced it thinly)
Cover cheese in sauce (I added about half a cup of sauce)
Add another layer of Noodles
Put a cup of mushroom slices on top of the noodles and add sauce (as you did in previous steps)
Add noodles and spred thick layer of ricotta cheese (4 cups). Add sauce.
Add another layer of noodles and mozzarella cheese & sauce
Add another layer noodles and mushrooms & sauce
Add a last layer of noodles and top with sauce ( make sure you leave a cup of sauce *or more* on the side for later)
Cover with foil and cook for 1 1/2 hours on 360
Remove foil add motzerlla layer and remaining sauce and cook for 30- 60 minutes

Beef Stroganoff

1 lb of ground beef
1 box of whole grain pasta any shape you prefer i use the rotini noodles
1 18 ounce container of sour cream
1 finely chopped onion
few cloves of garlic minced (fresh or in the jar)
1 Tsp of pepper if you like

Start Browning your hamburger meat when its most of the way done add your garlic and onion drain when your ground beef is done
Boil your noodles while cooking your ground beef As much as you like to fix you don't have to use the whole box i use about 3/4ths of the box! Drain
Add sour cream to your mixture add your noodles and combined evenly I like to add a packet of the lipton mushroom and onion mix sometimes it gives it a nice flavor but its good either way! takes about 20 mins roughly

Salsa Chicken

boneless skinless chicken breast (from 2 to 4)
1 jar salsa
1 or 2 cans of black beans drained and rinsed
2 tbsp taco seasoning


Canned or frozen corn - rinsed and or defrosted
cream cheese and or velveeta

In a crockpot place the chicken breasts, then cover with ingredients you choose for your salsa chicken but NOT the cream cheese or velveeta. Cook on high for 4/5 hours or 6/8 on low. If you choose to add cheese you would add 1/2 hour prior to serving.

This recipe is very versatile and you can do many things. Cut the chicken into cubes and or shred it.

We serve many ways, inside tortilla's, over rice, as a nacho topping, or as a quesadilla filling. I am sure you could come up with many other options. Since it makes a lot, I find it to be an extremely budget-friendly dinner!
