My kids love meatloaf cupcakes. Meatloaf ingredients include beef (and sometimes pork), cinnamon, egg, salt/pepper, breadcrumbs, worchestershire sauce. I spray a cupcake pan and divide the meatloaf evenly into 12 cups. While it is baking, I prepare instant potatoes. I also heat up a mixture of V-8 and ketchup in a pan to pour over the cupcakes. (8 oz. can of V-8 and about 1/2 cup of ketchup). When the meatloaf is done, I either spoon the mashed potatoes on top of the cupcakes or I place them in a ziplock bag and pipe it onto the cupcake. We never have any leftovers. I like mine with the sauce but the kids will eat it plain.
