My easiest, fastest, no leftover chicken recipe is Chicken Parmesan. Dredge chicken in egg, then breadcrumbs, brown in oil or butter until deep brown. Put in casserole dish. Pour spaghetti sauce (whatever flavor you like) over all of the chicken. Bake for about an hour, until chicken is tender. Sprinkle with mozzerella and parmesan and let melt. Serve over whatever pasta you prefer. I have to make enough for about 15 people, due to everyone going back for seconds! Most people use breasts, but I have found that using the cheaper thighs works just as well with no complaints. Hope this works for someone!

Not a crock pot dish but quick and easy!

Picante Peanut Chicken

2 teaspoons canola oil
1 pound skinless, boneless chicken breast halves
2 cloves garlic, minced
1 (16 ounce) package frozen stir-fry vegetables
1 (16 ounce) jar PaceĀ® Picante Sauce
1 tablespoon reduced-sodium soy sauce
1/2 cup dry roasted lightly salted peanuts, chopped

Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until well browned, stirring occasionally. Add the garlic and cook and stir for 1 minute.
Stir the vegetables, picante sauce and soy sauce in the skillet. Cook until the vegetables are tender-crisp and the chicken is cooked through, stirring occasionally. Sprinkle with the peanuts. Serve with your favorite rice on the side.

I made this last night:

It was awesome! My husband (who probably eats a lot like your kids) devoured it and took some for lunch today, which never happens. It was relatively easy too! If I had printed the recipe instead of always having to go to my phone it would have been a piece of cake.
